• Einkorn cake with coconut flour

The coconut flour is a wonderfull source of fiber and protein. It`s gluten free.

  • 4 eggs
  • ¾ cup of brown sugar
  • ½ cup of wholegrain einkorn flour
  • ½ cup of coconut flour
  • 1/3 cup of raw cacao powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ¼ tsp vanilla extract


  1. Mix the eggs and sugarwith a whisk – slowly, for about 3-4 minutes.
  2. Add the rest of the dry ingredients to that mixture and stir dynamically with a wooden spoon until a homogenous mixture.
  3. Spread the dough on the bottom of a well-oiled and floured baking tray.
  4. Bake in a preheated oven at 170 degrees, for about 15-20 minutes.
  5. Let the cake cool down before you serve them.
