It`s easy to make a cacao pumkin cake with wholemeal einkorn flour.

Ingredients:
- 400 g pumpkin (100 g grated and 300 g sliced into small cubes)
- 4 eggs
- 1 cup of brown sugar
- 2/3 cup of oil
- 2½ cups of einkorn flour
- ½ cup of cacao powder
- 20 g cacao beans (crushed)
- 1 tsp vanilla extract
- 1 tsp baking soda
Method:
- Place the pumpkin cubes in a baking tray, covered with baking paper. Bake the pumkin in a preheated oven until it softens.
- Meanwhile mix the eggs, sugar and oil.
- Successively add the einkorn flour, cacao powder, vanilla extract and baking soda. Stir continuously until a homogenous mixture.
- Add the grated pumpkin and stir again.
- Pour half of the mixture in a well-oiled and floured baking tray. Cover with the cacao beans and the baked pumpkin and add the rest of the cake mixture.
- Bake in a preheated oven (180-200 degrees), for about 25-35 mnutes.
