It`s easy to make a cacao pumkin cake with wholemeal einkorn flour.

Ingredients:

  • 400 g pumpkin (100 g grated and 300 g sliced into small cubes)
  • 4 eggs
  • 1 cup of brown sugar
  • 2/3 cup of oil
  • 2½ cups of einkorn flour
  • ½ cup of cacao powder
  • 20 g cacao beans (crushed)
  • 1 tsp vanilla extract
  • 1 tsp baking soda

Method:

  1. Place the pumpkin cubes in a baking tray, covered with baking paper. Bake the pumkin in a preheated oven until it softens.
  2. Meanwhile mix the eggs, sugar and oil.
  3. Successively add the einkorn flour, cacao powder, vanilla extract and baking soda. Stir continuously until a homogenous mixture.
  4. Add the grated pumpkin and stir again.
  5. Pour half of the mixture in a well-oiled and floured baking tray. Cover with the cacao beans and the baked pumpkin and add the rest of the cake mixture.
  6. Bake in a preheated oven (180-200 degrees), for about 25-35 mnutes.
