Easy and quick sandwiched biscuits with plum jam.

  • 200 g coconut oil (melted)
  • 4 tbsp. flax seed (ground)
  • 4 tbsp. water
  • 60 g xylitol
  • 4 tbsp. maple syrup
  • 600 g einkorn flour (sifted)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ lemon’s lemon peel (grated)
  • Vanilla extract
  • Plum jam (or any jam you like)
  • Ground walnuts for decoration


  1. Cover the flax seeds in water and let them sit.
  2. Form a gap in the middle of the flour and add the coconut oil, xylitol, maple syrup, flax seed, baking soda, lemon peel and other flavors into the gap.
  3. Start kneаding a dough. Since it is a very oily dough you will need to use parchment paper in order to roll it out and shape the cookies easier. You will also need stretch foil to cover the dough and then use a rolling pin on top, so that it doesn’t stick to the dough. The rolled out dough needs to be up to ½ cm thick
  4. Use a small glass to shape the cookies and then arrange them on a baking tray covered with baking paper.
  5. Bake in a preheated voen at 180 degrees, for 20 minutes.
  6. Let the cookies cool down and then use the jam to glue them two by two.
  7. Roll the sandwiched cookies in ground walnuts, which will stick to the jam.
  8. The longer the cooies sit with the jam, the softer they will get.
  9. Serve in a nice platter and enjoy!
