  • 8 tbsp. water + 4 tbsp. olive oil + 8 tbsp baking soda (= 4 eggs)
  • 1 cup of brown sugar
  • 1½ cup of wholegrain einkorn flour
  • 1 tsp baking soda
  • Vanilla extract
  • 4 medium sized apples


  1. Stir the water, olive oil, baking soda and sugar until a homogenous mixture.
  2. Add the flour, baking soda, vanilla and the apples – leave for last. Stir well.
  3. Pour the cake mix into a well-oiled and floured baking tray.
  4. Bake in a preheated oven at 180 degrees, for about 35-40 minutes. When the cake is ready decorate with castor sugar.
