EASY EINKORN CAKE WITH QUINCE AND MANGO

Einkorn cake with wholemeal flour and fruit filling.

Ingredients:

  • 150 g wholegrain einkorn flour
  • 1 tbsp. brown sugar
  • 60 g butter / ghee
  • 1 tsp grated lemon peel

Ingredients for the filling:

  • 2 medium sized quinces
  • 1 dried mango
  • 1 tbsp. honey (liquid)

Method:

  1. Mix the flour, sugar, melted butter and lemon peel. Stir well and let the dough sit in the fridge for 10 minutes.
  2. In a separate bowl grate the quinces, add the honey and mango.
  3. Take the dough from the fridge and spread it on the bottom of a well-oiled and floured baking tray. Spread the fruit mixture on top of the dough.
  4. Bake in a preheated oven at 180 degrees for 40 minutes.
