Einkorn cake with wholemeal flour and fruit filling.

Ingredients:
- 150 g wholegrain einkorn flour
- 1 tbsp. brown sugar
- 60 g butter / ghee
- 1 tsp grated lemon peel
Ingredients for the filling:
- 2 medium sized quinces
- 1 dried mango
- 1 tbsp. honey (liquid)
Method:
- Mix the flour, sugar, melted butter and lemon peel. Stir well and let the dough sit in the fridge for 10 minutes.
- In a separate bowl grate the quinces, add the honey and mango.
- Take the dough from the fridge and spread it on the bottom of a well-oiled and floured baking tray. Spread the fruit mixture on top of the dough.
- Bake in a preheated oven at 180 degrees for 40 minutes.
