EASY TRUFFLES WITH CARROTS, EINKORN FLAKES AND COCONUT

Quick and tasty truffles with fresh einkorn flakes, carrots and coconut.

Ingredients:

  • 150 g einkorn flakes
  • 350 g carrots
  • 150 g desiccated coconut
  • 200 g brown sugar
  • 1 tbsp. cacao powder
  • Vanilla extract

Method:

  1. Add the cacao powder to the einkorn flakes and pour just enough water to cover them. Leave them aside to soak.
  2. Grate the carrots, add the sugar and vanilla extract. Use a small pot to cook them for about 10-15 minutes, at a high temperature. Cook until the water boils away, while stirring continuously.
  3. When the carrot mixture is ready wait for a few minutes, then add 100 g coconut and stir well. Let it cool off completely.
  4. Shape the dough into small balls, which you can then cover in coconut or cacao powder.
