Ingredients:
- 150 g einkorn flakes
- 350 g carrots
- 150 g desiccated coconut
- 200 g brown sugar
- 1 tbsp. cacao powder
- Vanilla extract
Method:
- Add the cacao powder to the einkorn flakes and pour just enough water to cover them. Leave them aside to soak.
- Grate the carrots, add the sugar and vanilla extract. Use a small pot to cook them for about 10-15 minutes, at a high temperature. Cook until the water boils away, while stirring continuously.
- When the carrot mixture is ready wait for a few minutes, then add 100 g coconut and stir well. Let it cool off completely.
- Shape the dough into small balls, which you can then cover in coconut or cacao powder.
