EINKORN CAKE WITH WALNUTS AND CORNELS

Seasonal cake with einkorn wholemeal flour, walnuts and cornels.

Ingredients:

  • 3 eggs
  • 1 cup of brown sugar
  • ½ cup of oil
  • 1 ½ cups of einkorn flour
  • 1½ tsp baking soda
  • a pinch of salt
  • vanilla extract
  • 1 tbsp. yoghurt
  • 200 – 250 g walnuts (crushed)
  • 100 g dark chocolate
  • 100 – 150 g cornels (pitted and chopped or pureed)

Method:

  1. Use a whisk to mix the eggs, sugar and oil in a large bowl. Add the yoghurt and baking soda – mixed together in an effervescent mixture.
  2. Add the flour, baking soda, salt, vanilla, walnuts, dark chocolate and cornels.
  3. Pour the cake dough in a long baking tray.
  4. Bake in a preheated oven at 180 degrees, for about 35 minutes.
