Seasonal cake with einkorn wholemeal flour, walnuts and cornels.

Ingredients:
- 3 eggs
- 1 cup of brown sugar
- ½ cup of oil
- 1 ½ cups of einkorn flour
- 1½ tsp baking soda
- a pinch of salt
- vanilla extract
- 1 tbsp. yoghurt
- 200 – 250 g walnuts (crushed)
- 100 g dark chocolate
- 100 – 150 g cornels (pitted and chopped or pureed)
Method:
- Use a whisk to mix the eggs, sugar and oil in a large bowl. Add the yoghurt and baking soda – mixed together in an effervescent mixture.
- Add the flour, baking soda, salt, vanilla, walnuts, dark chocolate and cornels.
- Pour the cake dough in a long baking tray.
- Bake in a preheated oven at 180 degrees, for about 35 minutes.
