QUICK WHOLEGRAIN DESSERT WITH COCONUT AND ALMONDS

Quick and easy wholemeal cake with coconut and almonds.

Ingredients:

  • 2½ cups of einkorn flour
  • 400 g yoghurt
  • 1 medium sized apple (grated)
  • 100 g desiccated coconut
  • 100 g raisins
  • 80 g almond flakes
  • 1 tbsp. flax seed powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 9 tbsp. sunflower seed oil
  • 1 cup of brown sugar

Method:

1.    Mix the yoghurt and baking soda in a bowl.

2.    When the mixture becomes effervescent add the rest of the ingredients. Leave the apple and the flour for last.

3.    Stir well until a thick homogenous cake mix.

4.    Pour the dough in a well-oiled and floured baking tray and bake in a preheated oven at 180 degrees for about 45 minutes.
