FRESH SALAD WITH EINKORN, MUSHROOMS AND GRAPEFRUIT

This exotic salad is perfect for all connoisseurs of different tastes.

Ingredients

  • 1 cup of einkorn
  • 2 cups of water
  • Lettuce
  • 2-3 carrots (grated)
  • 250 g mushrooms
  • 150 g sweetcorn
  • 1-2 boiled eggs
  • ½ grapefruit
  • Dill to taste
  • 1 tbsp. butter
  • 3 tbsp. olive oil
  • 1 lemon
  • Salt to taste

Method

  • For the making of this salad you may use:

- einkorn sprouts. You can make einkorn sprouts at home. Soak the grains in water for 4-6 hours and then pour the water out. Wet the grains regularly (2-3 times a day) and they should start sprouting after 2 days. Keep the sprouts in a cool place. Always rinse out before eating.

- einkorn soaked in water. You can soak einkorn in (warm) water for 12 hours and then put it in soups, salads, yogurt for breakfast etc.

- boiled einkorn. You can cook einkorn by letting it simmer for about 30 minutes, while stirring with a wooden spoon. Cooked einkorn can be added to any meal you would normally prepare with rice.

 Tip: Einkorn should be thoroughly rinsed before soaking or cooking

  1. Cut the mushrooms into thin slices and sauté them in butter
  2. When the mushrooms change color add the corn and leave the pan on the hot stove for a few more minutes, then let them cool down
  3. In a medium sized bowl mix the lettuce and grated carrots
  4. Add the einkorn and the mushrooms with corn
  5. Decorate with sliced eggs and pieces of grapefruit
  6. In a separate bowl make the dressing for the salad – mix the olive oil, lemon juice, dill and salt and stir well
