Ingredients:
- 2 cups of einkorn flour
- 4 eggs
- 1 cup of brown sugar
- 400 g grated pumpkin (raw or baked)
- 2/3 cup of oil
- 100 g crushed walnhuts
- ½ tsp vanilla extract
- 1 tsp baking soda
- 1 tsp cinnamon
Method:
- Mix the eggs, sugar and oil in a bowl.
- Gradually add the einkorn flour, vanilla extract and baking soda, while stirring continuously until a homogenous mixture.
- Add the pumpkin, walnuts and cinnamon, and stir again.
- Place a muffin paper into every nest of the muffin tray and pour the mixture into each paper to reach 3/4s of its volume.
- Bake in a preheated oven at 180-200 degrees, for about 20-25 minutes.
