Quick and delicious recipe for Tabbouleh with bulgur of einkorn

  • 1 cup of roughly ground einkorn
  • 3-4 bunches of parsley
  • Mint leaves
  • 1 onion
  • 100 g of tomatoes
  • 1 lemon
  • 100 ml olive oil
  • Salt and black pepper to taste


  1. Boil the einkorn, rinse with cold water and let it cool down
  2. Chop the parsley and mint leaves and place in a bowl
  3. Chop the tomatoes into small pieces and add to the spices
  4. Grate the lemon and add the peel and the lemon juice to the mix
  5. Add the einkorn and dress with olive oil, salt and pepper
  6. Decorate with tomato rings
