Ingredients:
- 4 tbsp. butter
- 57 g dark chocolate
- ¾ cup of brown sugar
- ¼ cup of cacao powder
- 1 medium sized egg
- ½ tsp salt
- 1/3 cup of chocolate chips
- ¾ cup of sifted einkorn flour
- ¼ tsp baking soda
- ¾ tsp cinnamon
- ¼ tsp black pepper
Method:
- Mix the dark chocolate and butter and use a water bath to melt.
- Use quick movements to mix the einkorn flour, baking soda, cinnamon and black pepper.
- Add the sugar, cacao powder, egg and salt until a smooth, thick mixture.
- Add the melted chocolate and the chocolate chips.
- The mixture needs to turn into a dry dough. Add more flour if needed.
- Shape the cookies and place them on an oiled baking tray.
- Bake in a preheated oven at 165 degrees, for 13 minutes, and then rotate the tray.
- The cookies will look flat and cracked on top. When they cool down they are ready to be served.
