EINKORN CAKE

Quick einkorn cake with ground oats, rice flour and einkorn.

Difficulty: Easy

Ingredients:

  • 1½ einkorn flour
  • 1 cup of ground oats
  • 4 eggs
  • 1 cup of sugar
  • 100 ml oil
  • 100 ml yogurt
  • 2-3 tbsp. rice flour
  • 1 tsp baking soda
  • 1 lemon’s peel
  • Vanilla extract
  • Walnuts
  • Caster sugar

Method:

  1. Mix the einkorn flour, oats, rice flour and baking soda.
  2. Beat the eggs and sugar with a whisk.
  3. Add the oil, yogurt, lemon peel and vanilla extract.
  4. Gradually add the flour mix to the wet mixture while stirring. Sprinkle with crushed walnuts.
  5. Pour in a rectangular baking trey and bake at 220 degrees for 30 minutes.
  6. Finally, sprinkle with caster sugar.
