EINKORN CAKE WITH CARAMEL AND FRUITS

Ingredients:
- 4 eggs
- 1 ½ cup of brown sugar
- 1 cup of einkorn flour
- 1 tsp baking soda
- 1 tsp vanilla extract
- The peel of ½ lemon
- 3 tbsp. oil
- 200 g sour cream
- Apricot compote
- Optional types of fruit
Method:
- Whisk the eggs with 1 cup of sugar.
- Add the flour, soda and vanilla extract and whisk again.
- Add the lemon peel.
- Pour caramel (1/2 cup of sugar) on the bottom of a well-oiled baking tray.
- Then spread the apricots from the compote and pour the mixture over them.
- Bake at 180 degrees for about 35-40 minutes.
- Riddle the cake with a fork while it is still warm and then pour the compote juice over it. Cover with a kitchen towel and let it cool down.
- When the cake has cooled off completely spread sour cream on it and decorate with fruits on top. (e.g. banana, kiwi, strawberry, raspberry, apricot, etc.)
