The combination of mango and wholemeal einkorn flour is very tasty.

  • 3 eggs
  • 150 g molasses
  • 100 g butter (melted)
  • 80 g deseccated coconut
  • Mango compote
  • 200 g einkorn flour
  • 1 tsp baking soda
  • Pinch of salt
  • 60 g walnuts

*to prepare mango compote you need 1 mango – peeled and cut into pieces. Boil the mango in sweet water (honey or brown sugar) for about 15-20. Add a couple of cloves in the water. If you are using honey boil the compote at a very low temperature in order to preserve the nutrients of the honey.


  1. Whisk the eggs and molasses.
  2. Add the coconut, butter and the fruit from the mango compote.
  3. Stir the mixture with a spoon.
  4. In a separate bowl mix the flour, soda, salt and chopped walnuts.
  5. Add the liquid mixture to the dry one while stirring continuously until a homogenous mixture.
  6. Pour the mixture into a well-oiled and floured baking tray.
  7. Bake in a preheated oven at 240 degrees for 10 minutes. Then reduce the temperature to 200 degrees and bake for 30 more minutes.
  8. After baking wait for about 30 minutes before carefully taking the cake out of the baking tray.
  9. You might sprinkle castor sugar or deseccated coconut on the cake.
