EINKORN CAKE WITH DRIED ARONIA

Ingredients:
- 2 cups of einkorn flour
- 4 eggs
- 1 cup of brown sugar
- 100 g fine oats
- ½ cup of fruit tea e.g black currant tea (to soak the oats)
- 1 cup of dried aronia
- 1 apple
- The peel of 1 lemon
- 5 tbsp. oil
- 1 tsp baking soda
Method:
- Beat the eggs with sugar and oil until a fluffy mixture. Gradually add the flour while whisking.
- Add the baking soda, the already soaked oats and lemon peel.
- Pour half of the mixture into a well-oiled and floured baking tray. On top of it add ½ of the dried aronia. Pour the rest of the mixture and add the rest of the aronia on top.
- Cut the apple into thin slices, roll them in flour and place them on top of the baking tray.
- Bake the cake in a preheated oven at 180 degrees for about 40-50 minutes.
