One of our favorite cakes with einkorn flour, black currant tea and dried aronia.

  • 2 cups of einkorn flour
  • 4 eggs
  • 1 cup of brown sugar
  • 100 g fine oats
  • ½ cup of fruit tea e.g black currant tea (to soak the oats)
  • 1 cup of dried aronia
  • 1 apple
  • The peel of 1 lemon
  • 5 tbsp. oil
  • 1 tsp baking soda


  1. Beat the eggs with sugar and oil until a fluffy mixture. Gradually add the flour while whisking.
  2. Add the baking soda, the already soaked oats and lemon peel.
  3. Pour half of the mixture into a well-oiled and floured baking tray. On top of it add ½ of the dried aronia. Pour the rest of the mixture and add the rest of the aronia on top.
  4. Cut the apple into thin slices, roll them in flour and place them on top of the baking tray.
  5. Bake the cake in a preheated oven at 180 degrees for about 40-50 minutes.
