A CAKE WITH CHOCOLATE SPREAD AND SOUR CHERRIES

Easy to prepare and tasty einkorn cake with chocolate and sour cherries.

Ingredients (about 20 servings):

For the cake:

  • 300 g einkorn flour
  • 400 g brown sugar
  • 4 medium sized eggs
  • 250 ml olive oil
  • 2 tsp baking soda
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 50 g desiccated coconut
  • 100 g walnuts

For the glaze:

  • 400 g sour cream
  • 450 g chocolate spread
  • 100 g sour cherries
  • Optional: whipped cream and sour cherries for decoration

Method:

Cake:

  1. In a medium sized bowl mix the flour, sugar, soda, cinnamon and nutmeg.
  2. In a large bowl beat the eggs until they become light and fluffy.
  3. Gradually stir the olive oil in.
  4. Add the flour and stir until a homogenous mixture.
  5. Add the walnuts and stir well.
  6. Divide the dough in 2 equal parts and pour into 2 well-oiled and floured baking trays.
  7. Bake the layers in a preheated oven at 175 degrees for 1 hour.
  8. Let the layers cool off in the baking trays.

Glaze:

  1. In a medium sized bowl mix the sour cream and chocolate spread. Stir well until a homogenous mixture.
  2. Start assembling the cake. Spread chocolate cream on one layer, and sour cherries on the next.
  3. Spread the rest of the cream on the sides and top of the cake.
  4. Sprinkle with desiccated coconut and decorate with whipped cream and sour cherries if you wish.
