One of our first and favorite recipe for einkorn biscuits.

Ingredients:
100 g einkorn flour
120 g fine oats
1 egg
150 g brown sugar
125 g butter (softened)
Vanilla extract
½ tsp baking soda
1 tsp cinnamon
Pinch of salt
50 g nuts (walnuts, hazelnuts or other)
50 g raisins
50 g dark chocolate (crushed into pieces)
Method:
Beat the egg and sugar with a whisk.
Add the butter and vanilla and beat with again.
Mix all other ingredients in a separate bowl and gradually add to the egg mixture while stirring with a wooden spoon.
Leave the dough in the fridge for at least an hour.
Shape balls with the size of a walnut and spread on baking paper.
Bake in a preheated oven at 180 degrees for about 10-12 minutes. The biscuits are ready when hard on the outside but soft on the inside. They become harder when they cool down.
