One of our first and favorite recipe for einkorn biscuits.

  • 100 g einkorn flour
  • 120 g fine oats
  • 1 egg
  • 150 g brown sugar
  • 125 g butter (softened)
  • Vanilla extract
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • Pinch of salt
  • 50 g nuts (walnuts, hazelnuts or other)
  • 50 g raisins
  • 50 g dark chocolate (crushed into pieces)


  1. Beat the egg and sugar with a whisk.
  2. Add the butter and vanilla and beat with again.
  3. Mix all other ingredients in a separate bowl and gradually add to the egg mixture while stirring with a wooden spoon.
  4. Leave the dough in the fridge for at least an hour.
  5. Shape balls with the size of a walnut and spread on baking paper.
  6. Bake in a preheated oven at 180 degrees for about 10-12 minutes. The biscuits are ready when hard on the outside but soft on the inside. They become harder when they cool down.
