EINKORN COOKIES WITH HONEY

Ingredients:
- 300 g einkorn flour
- 110 g ground oats
- 150 g ground walnuts
- 1 egg
- 200 g sugar
- 100 ml oil
- 50 g honey
- 2 tsp baking soda
- 1 tbsp. yogurt
- Vanilla extract
- Cinnamon
Method:
- Beat the egg and sugar with a whisk.
- Add the baking soda to the yogurt, and add to egg mixture together with oil, honey, cinnamon and vanilla extract.
- Separately mix the flour, oats and walnuts. Stir both mixtures together with a wooden spoon.
- Shape small balls with the size of a walnut and stick a nut in each ball.
- Arrange in a baking trey covered with baking paper.
- Bake in a preheated oven at 220 degrees for about 15 minutes.
