A CAKE WITH APPLES AND APRICOT JAM

Quick and easy recipe for butter einkorn cake with apricot jam.

Ingredients:

  • 200 g einkorn flour
  • 200 g sugar
  • 3 eggs
  • 3-4 apples (peeled and thinly sliced)
  • 125 g butter
  • 1 tsp baking soda
  • 360 g apricot jam

Method:

  1. Beat the eggs and sugar with a whisk.
  2. Mix the baking soda with the flour and gradually add to the egg mixture.
  3. Melt the butter and add to the mixture.
  4. Pour the mixture into a baking tray and cover with apple slices on top.
  5. Bake in a preheated oven at 180 degrees for about 45-50 minutes.
  6. Spread the apricot jam on top of the cake and return to the oven for 5-10 minutes for a glossy finish.
