Quick and easy recipe for butter einkorn cake with apricot jam.

Ingredients:
- 200 g einkorn flour
- 200 g sugar
- 3 eggs
- 3-4 apples (peeled and thinly sliced)
- 125 g butter
- 1 tsp baking soda
- 360 g apricot jam
Method:
- Beat the eggs and sugar with a whisk.
- Mix the baking soda with the flour and gradually add to the egg mixture.
- Melt the butter and add to the mixture.
- Pour the mixture into a baking tray and cover with apple slices on top.
- Bake in a preheated oven at 180 degrees for about 45-50 minutes.
- Spread the apricot jam on top of the cake and return to the oven for 5-10 minutes for a glossy finish.
