EINKORN CAKE WITH PUMPKIN AND CARROTS

Ingredients:
- 1 cup of einkorn flour
- 1 tsp baking soda
- 1 cup of yogurt
- 2 eggs
- 1 cup of brown sugar
- 1 cup of ground walnuts
- 1 medium sized carrot (grated)
- 500 g pumpkin (grated)
- 1 tsp cinnamon
- 1 tsp oil
- 1 tsp dried orange peel
- 1 tsp dried mint
Method:
- Beat the eggs and sugar with a whisk.
- Add the oil, yogurt, carrot, pumpkin and cinnamon.
- Mix the baking soda with the flour and add to the mixture.
- Add the orange peel and mint.
- Pour the mixture in a well-oiled and floured baking trey.
- Bake at 200 degrees for 30 minutes.
