EINKORN CAKE WITH PUMPKIN AND CARROTS

Quick and easy recipe for einkorn cake with pumpkin and carrots.

Ingredients:

  • 1 cup of einkorn flour
  • 1 tsp baking soda
  • 1 cup of yogurt
  • 2 eggs
  • 1 cup of brown sugar
  • 1 cup of ground walnuts
  • 1 medium sized carrot (grated)
  • 500 g pumpkin (grated)
  • 1 tsp cinnamon
  • 1 tsp oil
  • 1 tsp dried orange peel
  • 1 tsp dried mint

Method:

  1. Beat the eggs and sugar with a whisk.
  2. Add the oil, yogurt, carrot, pumpkin and cinnamon.
  3. Mix the baking soda with the flour and add to the mixture.
  4. Add the orange peel and mint.
  5. Pour the mixture in a well-oiled and floured baking trey.
  6. Bake at 200 degrees for 30 minutes.
