Einkorn is a wild wheat variety and one of man's oldest foods - the ancestor of wheat. Until recently only archaeologists were interested in it. Einkorn is a graminaceous plant that belongs to the family Poaceae, Triticum species, Triticum monococcum subspecies.
In the past the crop was greatly used by the masses, however in the beginning of the 20th century it was gradually replaced by conventional wheat, as it allowed for higher yields.
It is the only grain that lacks human selection. As a result of conducted sort selection throughout the years, conventional wheat is easy to grow, gives great yields and has modified quality indicators. Unfortunately, this process also leads to a reduction in the wholesomeness of food. That is why einkorn is so valuable - the nutritional qualities of its grains have remained unchanged for centuries.

In Bulgaria there is no tradition in growing einkorn, but our experience until now shows that it grows in all soils, even abandoned ones. Its yields are notably lower than other types of wheat. Its greatest advantage is that its sort has been preserved and that makes it resistant to diseases, therefore the use of pesticides and herbicides is not necessary.
Einkorn has the upper hand when compared to other types of wheat due to the lack of human selection. With conventional wheat as a result of human selection the plant loses its natural balance, which causes disease and calls for herbicide and pesticide treatment. This advantage allows for einkorn to be grown in an ecological way and leads to the production of a healthy product.

Einkorn grows in all conditions. It is resistant to cold and dry weather, it cleans the soil and prepares it for other crops.

Remains of einkorn from Thracian times were found in our lands - pots full of einkorn were discovered. Grains of wild einkorn were identified at excavation sights, dating back to the Epipaleolithic period in a middle eastern region known as the Fertile Crescent. It is believed that einkorn was cultivated for the first time during the Neolithic period.
A long time ago, at the very beginning of human civilization, in the foothills of Crimea, the Balkan peninsula and the lands north of the Black sea there was a plant that today we classify as wild wheat. New research shows that civilization did not begin in the lands along the Tigris and Euphrates but in the foothill regions. Precisely there you could find fields, sun and water. Ever since then people have been growing this wild wheat, which today remains unchanged even in some parts of Bulgaria.
No one knows exactly where this wild wheat originated from, but coming down from the mountains to the plains, man carried the seeds and cultivated the plant.
The Thracians used for food mainly einkorn and varieties of emmer wheat. Archaeologists discovered these in many Thracian mounds. Einkorn is considered to be one of the healthiest human foods.
At later times - during the Bronze Age, einkorn cultivation gradually decreased on account of other crops, which led to it becoming a relict - a half-forgotten plant with almost no economic importance, grown as a regional species in Morocco, Turkey, former Yugoslavian countries and some mountain regions of France. Until recently it was used in these places for the production of bulgur and livestock feed.
Research shows that the newly found einkorn has not changed through the ages.
